Bison
A bison harvest refers to the managed culling or controlled slaughter of bison for meat, hide, and population control. Many ranches and conservation groups prioritize “field-harvesting” in the pasture using a precise rifle shot, which minimizes animal stress and results in higher meat quality compared to transporting them to traditional slaughterhouses.
Bison harvesting refers to the modern, ethical method of field-harvesting bison directly in their pasture, eliminating the severe stress associated with commercial slaughterhouses. This practice honors the animal’s life, preserves meat quality by avoiding spike in stress hormones, and supports regenerative agriculture ecosystems.
The Field Harvest Process
Unlike traditional livestock, bison remain largely wild, undomesticated, and highly prone to chronic stress. Ethical ranches follow a strict, careful process to ensure a dignified end:
- The Shot: Marksmen target a specific position in the pasture, utilizing a close-range head shot (frequently between the eyes and horns) to trigger an instantaneous nervous system shutdown. The animal drops immediately without pain or panic.
- Bleeding & Field Dressing: The animal is bled immediately on the prairie, and the viscera (guts) are removed. The gut pile is left behind to naturally return nutrients to the soil and feed local predators.
- No Waste Philosophy: Ranches like Wild Idea Buffalo Company and North Bridger Bison utilize every part. Hides are processed into rugs or leather, skulls are preserved for mounts, and bones/hooves are turned into pet chews or soup stock.
- Cooling & Dry Aging: The halved carcass is loaded into a mobile refrigeration unit, transported to a local processor, and typically dry-aged for several weeks to enhance flavor and tenderness.
